Tai-an Tea Co's organic premium Uji, Kyoto ceremonial Matcha uses the same traditional stone grinding method that was used over 800 years ago during 13th century Japan. This Matcha uses a Mikage granite stone to grind Tencha leaves into very fine powdered green tea. This stone can only create about 30-40 grams of Matcha per hour. A Mikage stone releases the least amount of heat of all grinding methods and only the highest quality Matcha uses this special stone.
This premium first harvest Matcha was harvested in Ujitawara, Kyoto. Ujitawara was the first location in Japan where tea seeds were planted in 1271. Ujitawara is a prime location for the growth of tea because of the balanced climate, dewy mornings, and location near streams and rivers. This allows the soil to nourish the plants with plenty of vitamins and minerals to grow strong and healthy. The ancient city of Uji, Kyoto is the most historical and famous location in Japan for tea.
Nutritionally, Matcha is a powerhouse. Matcha contains high levels of nutrition because of the sun shading process during harvest. About 3 weeks before the harvests are hand picked, the tea farmers shade the plants to block out about 90% of sunlight. This process gives tea leaves high levels of Theanine (amino acid) and Chlorophyll. Which in return, gives Matcha its Umami flavor and pristine green color. Chlorophyll is packed with vitamins, minerals, healthy fatty acids, and disease fighting compounds. Matcha contains over 137x more antioxidants than a regular cup of green tea.
